Plan to use at least three pounds of block-shaped cheese. Use a cheese slicer to make even slices (1/8" - 1/4"
thick). Using a few seasoned cheeses, like Jalapeo-Jack, will give the appearance of changing leaves. To make leaves
of various sizes, use cheese-leaf cutters (available in cookware and hardware stores). In the center of a round cheese
board, place a bowl of cranberry relish (available in most grocery stores). Place leaves in a ring around the bowl. Repeat
layering with remaining leaves. Cover with plastic wrap and store in refrigerator until serving time. Cookie Cutter
Garnishes Cut slice of food to the desired thickness. Place cutter on top of food and the plastic block
on top of the cutter. Press down with the palm of your hand. Gently and firmly remove food from the cutter.
Smaller aspic cutters of various shapes may be used to cut out forms in the petals to create a lacy effect. Each cut-out
may be replaced with a different colored vegetable such as a carrot or radish, or the colors may be mixed for a variegated
